As an old time fiddler, I can say that the biggest difference, bigger even than the breaks vs no breaks thing, is the sense of rhythm. I cannot for the life of me play a bluegrass "break" that matches their rhythm, and by and large, bluegrass fiddlers bugger up old time tunes so badly that they seem kind of like a mockery of the tune.
