The boat race verse refers to the Oxford vs Cambridge boat race on the Thames. The word "Varsity" usually (but not absolutely always) refers to these two, which before 1830 were the only two universities in England. The captains toss a coin for choice of "station" - Middlesex is the county on the North bank, while Surrey is the county on the southern shore
