I have not listened to the whole recording; I have heard only a snatch that's available online, but I can offer some input. In the fourth stanza, "bay" is a completely reasonable guess for that context. A bay horse is a dark reddish brown with a black mane and tail.

I have seen a version of this song in "The Fireside Book of Folksongs," although I don't remember exactly how the lyrics went. I do remember that they were a bit different, although the story is the same.
