A good Southern recipe: Pralined Sweet Potatoes 6-7 large sweet potatoes, baked in foil at 350 degrees for about an hour and a halfish. Peel potatoes when cool enough to handle (those suckers are deadly if the hot juice sticks to skin). Mash them well and add 1/2 cup brown sugar, 1/4 cup melted butter, salt to taste and you can throw in a pinch of cinnamon if you like. Spread the mixture in a 13x9 pan and top with 1 cup chopped pecans mixed with 1/4 cup brown sugar. Bake at 350 for 30 minutes til bubbly. This is delicious with roasted pork tenderloin and TURNIP GREENS! You can also used canned sweet potatoes or yams, but it's just not as good as starting with fresh.
