Dear Dave'sWife, The perch idea sounds not entirely like Jansson's Temptation, which is a traditional Christmas season dish in Sweden, not too far from here. (The way the wind is blowing today, I can almost smell the anchovies!) There's an article, and a link to a recipe, here. It is a wonderful dish, but you have to like anchovies. So, perhaps you could adapt that recipe, except of course perch is very mild...maybe perch and anchovies? Another potential problem is that the perch might add too much moisture, but if you put it in a separate layer on the bottom and added breadcrumbs, maybe it would be OK...not sure; Mrs. Claus is not Swedish and, anyway, doesn't have any experience with perch.
