With apologies to Mr Geoff, the very best poached or scrambled eggs are duck eggs, not hen's. Preferably very fresh ones, not always easy to come by. I speak as one who has tried every variant of egg over many years. Trust me on this. But thanks to Mudcatters, I am now going to try some of the suggestions above and will report back. One thing I won't be trying is the little-separate-pan idea. While capable of producing a good result, they are too standardised looking to make an interesting breakfast.
