Mushrooms work well in quiche. We had one for breakfast yesterday. They need to be sauteed so they lose their liquid or they'll make the quiche watery. Actually we used to saute our excess mushrooms in butter and freeze them in meal size packages. Not as good a fresh, but a great improvement over canned during the parts of the year when there are no fresh ones to be had. |
