Here's what we have in Summer: Boiled potatoes (± 2 medium sized ones per person), boiled eggs (± one per person), tomatoes (ditto), mild onion (sliced), olives, canned tuna (optional), sliced cucumber (optional), olive oil, wine vinegar, salt, pepper. You can use canned sardines or anchovies in oil or canned crab meat instead of tuna.
