as an omnivour and environmentalist, I have to disagree with the premise that a vegan diet is environmentally sound. Makes a good sound bite, but fails in the real world... at least in the one we are in today with a population that is already straining resources. "A whole-food, plant-based diet is centered on whole, unrefined, or minimally refined plants. It's a diet based on fruits, vegetables, tubers, whole grains, and legumes; and it excludes or minimizes meat (including chicken and fish), dairy products, and eggs, as well as highly refined foods like bleached flour, refined sugar, and oil." This sounds pretty close to the Mediterranean diet which is more moderate and does not exclude animal products. If you want to live healthier... get Monsanto lobbyists out of politics... or it won't just be cereal grains that they muck about with. To many vegetables and fruits are already inferior because the varieties have been altered to meet packing and shipping requirements over nutritional value and flavor. Pretty doesn't cut it, not when it's all cosmetic and achieved with pesticides. Be very careful what you ask for, because you may not really like what you get.
