Although not a citrus base, so not exactly marmalade, marrow and ginger conserve makes a great addition to toast. I grew courgettes one year and a couple of them hid in the jungle of leaves and reached over 6lb each. The standard recipe starts with 1 inch cubes, but it is better to make them smaller, and as slices rather than cubes.
