As someone who has suffred from UC for many years, I've found one approach that seems to work for me. It's a diet based on the book 'Food and Gut Reaction' (I've forgotten the author's name - something like Gottchaulk) The author's daughter suffered from UC and she researched different approaches and came up with a theory based on the lost of the ability of the intestines to absorb certain sugars.

The basis of the diet is to avoid most sugars, eliminate wheat products, starches and alcohol. It's a tough diet to stick with but it works!

I'm not at home right now but I'll try to send more info when I'm back in a couple of weeks. Meanwhile, you might try a search at Indigo (it's a Canadian book) or other bookseller. Maybe your local library can track it down.
