Fresh spinach, destemmed and torn into shreds (or use baby spinach), tossed with dried and sweetened cranberries, toasted pine nuts or walnuts, crispy cooked bacon crumbles, topped with shredded goat cheese spiced with basil and dried tomatoes, with a wild huckleberry (or red raspberry) dressing...mmm, mmm, good!
