2. As far as I know you can dictate to iTunes how it will or will not load things onto your iPod. I make iPod playlists for any folder of songs I want to bring over and drag them to it. The iPod ends up organizing just the way the source materials are organized.

3. There are iPod preferences in iTunes which only appear when the iPod is connected to the computer, so look those over and set it to manual updates.

4. Many people do not like the earbuds -- it depends on the shape of your ears. There are plenty of 3rd party earphone makers for a lightweight over-the-ear alternative.
