I was guessing that someone would say that 'oss' mean 'hoss' {horse}and 'wee oss' mean 'little horse' or alternatively that 'wee' was 'Whee!, a call of some indeterminate meaning that signifies pleasure..
But I guess that's too simplistic...
????
