Charlie, I would not worry too deeply over the food issues, I think whoever made the observation is correct; complaining about the food is part of the ritual of any camp, school, hospital. The idea of taking kitchen turns is appealing, but if that is not an option at the new camp, as long as there is a salad bar and something very basic at each meal, I don't suppose it matters a lot to people who are there for the music and the people.
The bunks could be an issue though; I expect you will need to have a way for those who cannot readily climb into a top one to indicate so at registration. There is a pretty broad range of ages, weights, and levels of physical ability. Also, if one is sleeping in a bottom bunk and a late arrival climbs in above one, there is no way one can sleep through that. So this overweight gimpy-kneed all-nighter could be one of your challenges!
