If my memory serves me well, there is a musical instrument shop more or less set into the arches of the Charles Bridge on the opposite side of the river from the Old Town. You have to drop down to some streets on the left hand side of the bridge as you are approaching the Little Quarter.

I can't say how good their guitars are.
