Sorcha, probably no cumin in the real recipe. I added it because it has a not-quite-food taste quality not entirely unlike what I was looking for in the mystery ingredient. Not the right taste, but an interesting experiment that got me closer to the goal.

I added it last, after I had established that I didn't have whatever ingredient it would take to get it right on the first batch.
