The Saxavord website suggests they were introduced for their pelts, which makes a bit more sense than herding fish.

I've tried to find more about why the Vikings are named, but apart from a fragment on Antiquities about otter faeces (presumably the absence of otherwise in different levels?) I can't get at any hard (or soft) statements.
