I have a recipe for a pork, tomato, onion, and eggplant casserole that is heavenly. Plus, it knocks off two or three eggplants in one meal that way. Also, I fry up breaded slices and cover them with tomato sauce and mozarella and freeze them for meals later. Very good when you're hungry and in a hurry.
