Made applesauce while I cleaned in the kitchen:

Wash apples. Remove stems. Put apples -whole, with skins, cores and all-
into a big roasting pan. Cook in the oven at 350F until soft, flattening them with a potato masheras they cook. Put through food mill. Sweeten or not. Bottle. Refrigerate, serve, freeze, or process in pressure canner.

If you return the sauce to the oven (or crock pot, no lid) after removing skins, seeds, and cores with the food mill, you can cook it down to delicious apple butter. This works for pears, too.
