Back in New England, all we ever did, as did the historical farms, etc. was hang them upside down in bunches, Maryanne. They always dried quite nicely that way and looked pretty, esp. when tied up with some ribbon and bows. You can also spread them around on a wicker tray, which I did with the catnip this year, and just turn them over every day or so until they are dried. Things dry more easily out here in the low humidity, but I still had no trouble in CT and MA getting them to dry by hanging.
