I wonder if one could use something like a flat bamboo steamer on the dehydrator. That would offer enough room and the lid would still fit on top. With our current house I'd be inclined to use a drying rack either suspended over the wood or coal stove or one with legs to hold it above the surface. This works for drying sliced apples and herbs.

The need for more freezer space is one reason we bought the dehydrator last summer at a neighbor's yard sale. Another reason is that we deliberately use a variety of methods for fod preservation. Say the frozen food spoils as a result of a power failure; we'll still likely have our dried stores, root cellar items, and foods preserved in jars.
