It sounds like you have a plan, Andrea! Make back the cost of this dehydrator with your sales at the fair.

Let me ask a question. I've always liked some dehydrated fruit like apricots and craisins, but what all are you dehydrating and how will you use it? Cooking, baking, in soup to reconstitute, grinding for powder, etc? When I was a kid my mother used to buy bags of dehydrated apples slices that we would soak in water then would make into pies. Is this like what you're doing?

It's COLD this morning. Down to 40. I didn't have to go cover the garden but I'll keep an eye on the forecast and make a point to pick a few more eggplant for a last hurrah in the kitchen this weekend. I'll be back in regular funds tomorrow and I'll go pick up some half-pint jars and see about making a batch or three of a couple of recipes I've been given. I can always use this as gifts this year (caponeta, if I'm spelling it right, is best when it is in the jar for a month before opening). Spread it on crusty bread and you have a great appetizer or light lunch. :)
