Because the waitress took the effort to make sure our needs and wants were met whilst at the same time being unobtrusive and very very pleasant. She worked incredibly hard to make sure every customer was being attended to rather than just grunting and making you feel that everything you ask for is too much trouble. I have worked in many inner city schools and worked with children from various ethnic groups. Most come to this country to make a new life for themselves and work damn hard to do so. Yes, there are some who hope to take advantage of the system although they are far outweighed by non immigrants who try to do likewise. That said such people in any group are a very small minority but of course no one will buy a 'newspaper' (and I hesitate to regard the Sun or Star as such)with the headline "good worker gets job and pays his way".
