I think I like the Sebastian Temple "Channel of your peace" rendition better, but this one is also pretty good. I think "The Prayer of St. Francis" is something that lends itself very well to musical arrangements. The 23rd Psalm, of course, is another one. Can't recall hearing a musical version of "Canticle of the Sun." I've seen 'em in hymnals, but never heard it performed.
I'll take that back - Marty Haugen has a rather nice "Canticle of the Sun":

The heavens are telling the glory of God,
