Most of them that are available here use methylated spirit burners. You use meths in the USA, but don't call it that. Impure ethyl/methyl alcohol with purple colouring and a bitter taste to stop Shane drinking it.

I prefer to cook fish in mine, oily, dark-fleshed fish that aren't so nice cooked in other ways.
