Genie, a lttle trick I have used very effectively this year is having a seperate digital recorder recording in Real Time ,simultaneously with the video shooting, I used a Edirol RO9 and then married the sound to the video in the video editor, if the video sound was Cr*p as it can be. The built in pair of stereo mics on the Edirol are very good, and being digital you can boost the levels and make adjustments before adding to the pictures, it also has the benefit ,of course of allowing amost continuous recording of the "interesting" sound track!!even when you are not videoing.
