Yes, there seems to be too little sugar in fruits and no natural yeasts to make fruit wines (the pedants will say wine only comes from grapes which is were we started) so you have to add it. Elderberry seems to be a common favourite, I use blackberries (plenty around here) but you can use nettles, potatoes, oak leaves, almost anything. It's cheap and very strong. And you don't have to worry about all that rubbish about pinot noir etc. If you distill the brew you may get a visit from those men mentioned in 'Darling Corey'. The Irish distill (illegally) potato wine to produce poteen which will really blow your head off. Liquers are not usually distilled friut wines but brandy bases with herbs, spices, etc added.
