"Dry" doesn't mean "sour" in wine, it means low residual sugar. "Sour" has to do with the amount of acids. Something can have high sugar and high acids, low sugar and high acids, high sugar and low acids, or low sugar and low acids. Only the combinations with low sugar are dry; the combinations with high acids are sour.
