I also love squash. I take an acorn squash, cut it down the middle, scoop out the seeds and place both halves cut-side down on a greased foiled baking sheet. I used olive oil for this. Nothing else. Bake it at 425^o for an hour and 15 minutes. It caramelizes the edges and the whole thing is wonderful just like that, scooped out of the skin with a spoon.
