I also love squash. I take an acorn squash, cut it down the middle, scoop out the seeds and place both halves cut-side down on a greased foiled baking sheet. I used olive oil for this. Nothing else. Bake it at 425o for an hour and 15 minutes. It caramelizes the edges and the whole thing is wonderful just like that, scooped out of the skin with a spoon.
