Hubbard squash is among my favorites. I think what is daunting about them, besides the usually gray-green color and the warty skin, is the size. Most are huge! Just one could feed a family of four for at least a couple of days if they ate nothing else. For those who have never seen one, picture an ugly (American) football about a foot and a half long to two feet long and eight or ten inches in diameter. I never weighed one but guess at ten pounds for an average. They simply look too big to eat. But once you get past that notion, you are in for a treat. Delicious! I used to make a cream soup with Hubbard squash, cream, salt, pepper, and maybe a dash of cayenne and/or nutmeg all blended together. Just great!
