Zucchini is good fried, breaded or unbreaded. Quarter inch slices work best. Yellow squash is good that way too. A sweet desert bread made from zucchini is delicious but I've never actually baked any myself. Acorn squash is delicious prepared the way it is described above. I put honey on it. Spaghetti squash is a great lower carb alternative to actual spaghetti. Bake it in the oven and then tease out the strands with a fork. Looks much like thin gauge spaghetti and can be served with a tomato sauce. Of course the best use of squash is pumpkin pie spiced with nutmeg, ginger, cinnamon and lots of ground clove. A friend of mine makes pies out of other types of squash as well. Squash is a wonderful vegetable with many varieties and great versatility. Very nutricious. The "Three Sisters" of Native American agriculture were squash, maize(corn) and beans, all planted together. As the cornstalks grew, the bean vines used them as a stake and the squash vines spread out along the ground. I've heard it said that this method kept the soil from wearing out because what one plant depleted from the earth the others replenished.
