I wasn't thinking about the cheerleading aspect of this thread. Thanks for pointing that out!

I spent almost five hours on my feet this afternoon, started cooking at 3 and finished just after 7:30, when Moonglow picked up a pan filled with Puerto Rican meat pies called "empanadillas" to deliver to her Dad. His mother gave me this recipe and showed me how she made them about 22 years ago. We got together at the brother-in-law's house in San Diego, and between five of us (his father was still alive then) we made the sofrito (part of the sauce), cut up meat (pork in that instance, chicken in this one), made the pastry (kind of like a PR tortilla) and made the pies. I took notes, and I transcribed them and sent a copy over. It's one of those vague recipes that lists 2 cups of flour and no quantities of anything else listed. Definitely one of those "you had to be there" recipes! :-)

I have the evening to putter; the kids will come in late, and then I'll do stockings and we'll have breakfast of pancakes and bacon (a rare treat) and then exchange a few gifts. It's a slim stack this year, to be sure, but the money is going to a good cause - flying my son back and forth, and putting both of them through college.

Please let us know how it goes with you - Jeremiah, Morgan, all of the small folks who have kept us so entertained are on center stage right now. Please let us know how it goes!
