I hope to spend a week on the islands in the third week of May this year. We thought we would tour North to South with a car.

Can any local recommend any must see / must do things that are not in the tourists guides? If you had to do one thing what would it be? + low/medium cost accomodation for 2 couples?

I'll bring my fiddle and hope to catch a session.
