When we went to visit 'Spaw I brought dessert, and I promised to send him the recipe. Good for one is good for all, so I thought it best to post it. Shouldn't we get a prefex for cooking or recipes sometime? Anyway, here it is, from my paternal grandmother. No idea where she got it.
1 cup brown sugar 1/2 cup white sugar 1/2 cup oleo (margarine) 1/2 cup oil
3 cups flour 1 teaspoon cinnamon 1/3 teaspoon salt 2 1/4 teaspoons baking soda 5 Tablespoons cocoa
3/4 cup buttermilk
3 eggs 1 teaspoon vanilla 2 cups grated zucchini 1/2 cup chocolate chips 1/2 cup chopped nuts 1/2 cup raisins
Beat sugars, oil, and olio together. Sift the dry ingredients together and add alternately with the milk. Add the rest of the ingredients. Pour into a freases 9x13 pan, bake 35 minutes at 325 degrees Farenheit.
I eliminated the salt, only used oil, only used white sugar (this time), used sour milk rather than buttermilk, and baked it in a loaf pan, which results in a longer baking time, but makes it easier to slice and serve.
