This is my favorite: Cod brandade. To use any oil but olive oil sounds like heresy to me, as any other additions (onions, cream, eggs...). It tastes better when you make it by hand and not with a processor but it's so much longer! You can use it as a dip, as a filling, or boil two or three potatoes, puree them and mix it all, then bake it if you wish but it's optional. You can also add it to boiled spinachs + cream -I do this to "improve" the spinachs I'm not a great fan of.
