A specialty for over 100 years are blue cheeses; look for cave-aged. From Colorado, look for Midnight Blue cave-aged, from Avalanche Cheese Company, Paeonia, CO. Hard-to-get as resorts and restaurants take most of it.
American goat cheeses are served at fine resorts.
