Stu, I am in awe of you in your role of palaeontologist (being a botany graduate meself, though I did do a palaeobotany course at Imperial College under the great Kenny Alvin, and got a first in it...), but I cannot easily respect a man who omits the mantecura, the sine qua non, from his risotto.
