Mrs Musket occasionally makes Jiggs Dinner. Not known as a dish as such over here but she did her elective as a medical student in St Johns and the family she boarded with introduced her to it.

Regarding corned beef, I make corned beef and potato patties, dimple in the top and coddle an egg in them. Chill them and have them as a snack. Yum.
