I'm surprised no one has mentioned the real reason for tuners on headstocks: it dramatically decreases the amount of time it takes to tune the instrument between songs. When I'm on stage I'm always very conscious of the ratio of music time to not-music time. Also, almost anything that makes the mechanics of being on stage easier is worth it. It frees one to concentrate on the important things, like the music and the audience.
