I think of people like John Prine, Steve Goodman, Guy Clark, Townes van Zandt as singer-songwriters. I like all of their stuff. Other singer-songwriters to try out are Gillian Welch (her songs have a very traditional feel to them) & Fred Eaglesmith (a fellow Canadian). For more traditional folk music I like Doc Watson, Norman Blake, Utah Phillips, etc.
