You can use either s or z in such words to your heart's content in the UK. America is a little more picky. Bottom line, a Brit's use of the z is unobjectionable. The fact is that the use of z predates any use of s in such words in British English by a couple of hundred years. I trust that I've gotten my point across... :-)
