Tripe has very little smell when cooking as long as it is fresh and well cleaned. I can't remember it from my youth as I don't think my Mother ever cooked it. When Mrs G does it there is little or no odour at all.

Just looking it up now and it can smell depending on the cow's diet but of it is well washed first any of that should go.
