OK, got side tracked last nite, had to help Kate finish a paper on Scotland, and she stole my computer to do it.
Brochtá Foltchep
parsley
2 lbs leeks
2 pints milk
knob of butter
2 ounces oatmeal
salt and pepper
Boil the milk with the oatmeal until cooked. Add the butter and mix in the chopped leeks. Cook gently about an hour until leeks are tender. Season to taste and garnish with chopped parsley.
To clean leeks:
Cut off the tough part of the upper green stalk and and the root end just like a green onion. Slice the leek lenghtwise. Rinse WELL under cold running water as leeks are much more prone to getting dirt between the layers than green onions (scallions)
