Going back to this thread...
Am going to have Thanksgiving with my kid who's in the loony bin. Taking: -roasted turkey thighs, which I do marvelously by now, for both of us -Mashed potatoes for one, which will be the contents of 2 baked potatoes heavenly (that is, heavily till it's heavenly) buttered -(I'm keeping the potato skins) -string beans for both of us -green salad for both of us -Pie. The pies we usually have are
*Ron's apple pie, a recipe from a long-divorced ex-in-law, which has a cookie bottom and a crumble top crust, and sour cream in the filling, oooh yum. That has been my annual contribution for a while now.
*Cherry pie with a marzipan layer in the bottom crust. this is the one I"ll be sorry to miss, so I might have to make it, too.
*Pecan pie which I'd add chocolate chunks to if I made it.
*Pumpkin pie I never eat but it is divine, I am reliably informed.
The issue with pie is, I'd like share with the staff at his facility, but haven't gotten permission yet. If that's OK, I'll make at least 2 of the pies (applle and cherry) and hand out a lot of slices. If they say we can't share, I'll convert the recipes to muffin tins or cupcakes. And I shouldn't have any.
Can I make a single-serve pie out of one apple? I think I'm about to find out.
Anybody skilled at scaling recipes from one big to lotsa little?
