I just did an internet image search of TexMex and Texas food and they don't look the same as the food on that menu. I think it is a very bad attempted translation by Aussies and it has failed miserably. On the behalf of Aussies, I offer our apologies for the gross misinterpretation of the Texas tradition.

I think they are using the more-is-better approach and it is not working.

BTW, Hubby has a smoker and he has used it to make really delicious smoked ham and smoked chicken. He hasn't tried to do it with beef yet.
