Margo--I think a capella singing was one of the things that was put on the endangered species list by the commercialization of "folk" in the sixties, where too much was I-IV-V done on nylon stringed guitars, period. A capella needs to be plugged; this is a noble cause. Go for it.
As to material, spirituals are nice. Also give thought to the Scottish stuff because that was traditionally sung a.c., with all the little vocal tricks that make it less bland to listen to.
