Can't speak for the Catholics but as an Orthodox I will say this:

1. We distinguish between Worship (which is due solely to God) and reverence (which can be given to any person).

2. We believe that the reverence displayed to an icon (holy image) passes through that image to the person depicted.

3. We don't "pray" to saints (incl. Mary) the same way we "pray" to God. We ask the saints to pray for us before God, just as a Protestant might ask a friend to pray for him/her. We believe that, having passed over to the new life, the saints have more time on their hands than we who are still in this vail of tears, and thus can pray for us more than we are able to ourselves. Not that we don't pray for ourselves and for others, mind you. We do that too.
