There are plenty of Folk Music MIDI files on the net. All you need is a simple MIDI editor (I've got a great old 16-bit one called MIDI SESSION) and you can revoice them to any combination you like, minus the part you want to play yourself (although you might want to leave it in at lower volume). You can also change the speed and even the key to suit. With suitable software (I recommend WAVMAKER III) you can render MIDI files into (RAW)WAV files and with a CDR create an audio CD. Linda and I are using exactly that technique for Music Hall backing tracks as neither of us is a pianist.
