When I was in school they talked about "approximate rhyme." Not everything is meant to exactly rhyme, every time.

Some words are rhymed with odd pronunciations because it's funny.

That being said, of course, the language does continue to change on a pretty regular basis.

I think it is the evolution of languages, plus the influence of dialects, plus an individual's perception of how a rhyme should sound.
